1 Tb fresh lemon juice
1 Tb sugar
2 C. plain nonfat yogurt
1 Tb olive oil
1 t. chopped fresh mint
salt & pepper to taste
4 4-6 oz. boneless, skinless chicken breasts
1 C. cherry or grape tomatoes, halved
1 med. Cucumber, peeled, halved lengthwise, seeded & sliced
½ C. chopped fresh green onions
1 C. dry instant couscous
½ C. halved black olives
½ C. crumbled feta
fresh mint sprigs for garnish
Whisk lemon juice, sugar, and salt and pepper in a small bowl, followed by the yogurt and olive oil. Stir in the chopped mint. This may be stored in the refrigerator for several days.
Marinade chicken in 1 cup of dressing refrigerated for 15 minutes to 12 hours. In a large mixing bowl, combine tomatoes, cucumbers, green onions, and the remaining dressing. Cover and refrigerate for 15 minutes to 12 hours.
Preheat a well-greased grill to medium. Grill chicken for about 6 minutes on each side or until cooked thoroughly. Transfer chicken to a cutting board, and when cool enough, slice into thin strips. Allow to cool completely. Toss chicken in the vegetable mixture and place in the refrigerator. Follow the preparation instructions on the couscous or bring 1 ½ cups of water to a boil. Stir in the couscous with a pinch of salt. Cover, remove from heat, and let stand for 5 minutes. Fluff couscous with a fork and transfer to a large serving bowl. Allow to cool completely. Stir the couscous into the chicken and vegetable mixture and season with salt and pepper. Serve chilled or at room temperature garnished with olives, feta, and mint.
