Sensory Description:

The aroma opens with fragrant matcha and fresh green-tea tones layered over the gentle rice-derived character of the sake. The palate is smooth and rounded, bringing together savory umami, restrained sweetness, and the refined bitterness of Uji matcha. Earthy tea notes define the mid-palate, while the sake base lends softness and breadth. The finish is persistent but balanced, leaving lingering matcha fragrance, mild sweetness, and a clean touch of tea bitterness.

Producer’s Background:

Nihonsakari was founded in 1889 in Nishinomiya, Hyogo, an area with a long and important history of sake brewing. Originally known as Nishinomiya Sake Brewing Company, the business adopted the Nihonsakari Co., Ltd. name in 2000. Over more than a century, the brewery has combined traditional sake production with technical development and new approaches to presenting Japanese brewing culture. Nagatoshi Nakane serves as Toji and Brewing Head, overseeing sake production for the company. Nihonsakari Matcha Sake reflects this balance of tradition and experimentation, combining junmai sake with Uji matcha in a style intended for both straightforward drinking and contemporary mixed serves.

Serving Suggestions:

Serve chilled at approximately 8 to 12 degrees Celsius in a small wine glass, sake glass, or tumbler to highlight its matcha aroma, gentle sweetness, and umami. It can also be served over ice, lengthened with soda water, mixed with milk for a creamy matcha-style serve, or incorporated into cocktails. Slight warming brings greater softness and emphasizes the sake’s savory character. Pair with lightly sweet desserts, vanilla ice cream, mochi, fresh fruit, or dishes whose mild sweetness and savory character complement the matcha.
