Refined and composed, with a poised Cabernet profile and an emphasis on balance rather than sheer weight, the 2023 Pollard Cabernet Sauvignon is an estate-grown expression of Cabernet Sauvignon from Pollard Vineyard. The wine brings together the structure and depth of the variety with an elegant, approachable character suited equally to the dinner table or a quiet glass after a meal. Sensory Description:

The 2023 Cabernet Sauvignon is shaped around elegance and balance, with a refined structure that keeps the wine composed and easy to approach. Its Cabernet character carries enough depth for richer foods while retaining the poise to work as a contemplative sipping wine. The overall impression is polished and harmonious, with structure and fruit held in measured proportion rather than pushed toward excess.

Winemaker's Background:

Robin Pollard founded Pollard Per Se in 2012 after a career spanning agriculture, tourism, wine, and economic development. Raised on an Iowa farm and educated with a Master of Science in Agriculture, she brought a multigenerational farming perspective to the creation of Pollard Vineyard in Washington's upper Yakima Valley. The ten-acre vineyard was developed with an emphasis on clonal selection, dense planting, efficient water use, and careful vineyard management. Patrick Rawn of Two Mountain Winery manages the vineyard, while longtime collaborator Chris Camarda of Andrew Will Winery has played an important role in the development of Pollard's wine program. The vineyard itself is named for Robin's parents, Kathleen and Oren Pollard, carrying her family's agricultural legacy into the next generation.

Serving Suggestions:

Serve at approximately 16 to 18 degrees Celsius in a generous Bordeaux-style glass. Its balanced structure makes it a natural dinner companion for roast or grilled beef, lamb, mushrooms, and other savory dishes. After dinner, pair it with an aged cheese plate or dark chocolate, or serve it on its own as a relaxed sipping wine.
