Por Lo Bueno Mezcal

Por Lo Bueno Mezcal is an artisanal mezcal project born from a lifetime of friendship, art, and an enduring love for one of Mexico's most storied spirits. Rather than beginning as a commercial venture, Por Lo Bueno grew out of decades of shared conversations over exceptional mezcal between founder R.H. Miller and the late German-born Mexican painter H.G. Pavlata (Enrique Luft, 1931–2014). Their friendship began in 1971 in Pátzcuaro, Michoacán, when truly great mezcal could only be found through local connections and was often carried home in whatever container happened to be available. Those evenings of conversation, philosophy, art, and mezcal eventually inspired a brand dedicated to preserving the authenticity and cultural richness of traditional mezcal.

The name "Por Lo Bueno," meaning "To All That Is Good," was Enrique's favorite toast. It celebrated everything that makes life meaningful: good friends, good food, good conversation, good art, and, of course, exceptional mezcal. That philosophy remains the heart of the brand today. Every bottle is intended not simply as a spirit but as an invitation to slow down, gather together, and appreciate life's simple pleasures.

Art is inseparable from Por Lo Bueno's identity. Each label features reproductions of Enrique Pavlata's original paintings and engravings, many of which were gifted to or collected by Miller over decades of friendship. Influenced by the Italian Mannerist painters Parmigianino, Rosso Fiorentino, and Pontormo, Enrique believed in the artistic concept of concetto, where an image reveals deeper layers of meaning through thoughtful composition. Por Lo Bueno carries this same philosophy into mezcal, treating each expression as both a handcrafted spirit and a work of cultural storytelling.

Production takes place in Oaxaca using time-honored artisanal methods under the guidance of Maestro Mezcalero Don Clemente. Every agave is cultivated with sustainability in mind, reflecting the brand's commitment to protecting the future of mezcal. Rather than relying on diminishing wild populations, Por Lo Bueno plants and nurtures cultivated agaves, allowing each variety to reach full maturity over periods ranging from six to thirty years, depending on the species. Harvesting only mature agaves ensures maximum sugar development while allowing plants the opportunity to reproduce naturally.

The production process remains almost entirely manual. Mature piñas are hand-harvested with machetes and axes before being slowly roasted for 4 days in traditional underground earthen pit ovens. This slow cooking caramelizes the agave's natural sugars while developing mezcal's signature smoky complexity. The cooked agave is then crushed using a horse-drawn stone tahona, fermented naturally in pine-wood vats with well and spring water, and finally double-distilled in copper stills. Every decision favors patience over efficiency, preserving the individual personality of each agave variety and each production lot.

Por Lo Bueno bottles each mezcal by hand at the distillery, with every lot reflecting the character of a particular harvest rather than striving for industrial uniformity. The result is a portfolio of mezcals that faithfully express Oaxaca's remarkable diversity of agave, terroir, and traditional craftsmanship. Smoke never overwhelms; instead, it serves as one voice among many, allowing floral notes, minerality, tropical fruit, herbs, earth, and roasted agave to emerge naturally.

Ultimately, Por Lo Bueno is far more than a mezcal producer. It is a celebration of Mexico's artistic heritage, ancestral craftsmanship, and the enduring friendships that inspire life's greatest moments. Every bottle honors the philosophy behind its name: a toast to all that is good, shared slowly among friends with stories worth telling.
