Toasted coconut, roasted almond, and dark malt richness shape Cerebral Brewing's 'Night Market' Coconut Almond Stout Beer with a layered, dessert-inspired profile. This 6.8% stout incorporates toasted coconut and toasted almond, bringing nutty depth and aromatic richness to Cerebral’s technically focused brewing approach. It reflects a brewery built around precise methodology while leaving room for imaginative ingredients and expressive recipe development.

Product Details:

  • Founders: Sean Buchan, Dan McGuire
  • Head Brewer: Sam Bennett
  • ABV: 6.8%
  • Adjuncts: Toasted coconut, toasted almond

Sensory Description:

Toasted coconut opens with a rich, gently sweet aromatic character, layered with the warm nuttiness of roasted almond. Dark malt tones provide depth underneath the adjuncts, giving the beer a rounded stout profile while the toasted ingredients add complexity rather than simple sweetness. Coconut lingers through the finish, alongside roasted-nut character and a deeper malt-driven impression.

Brewer's Background:

Cerebral Brewing was founded in 2015 by Sean Buchan and Dan McGuire in Denver’s Congress Park neighborhood. The brewery approaches production through a combination of scientific methodology and creative recipe development, supported by an in-house QA/QC laboratory that has been part of its program since its early years. Since 2022, Cerebral has brewed from an 18,000-square-foot production facility in the Aurora Cultural Arts District. With Sam Bennett serving as Head Brewer, the team produces a broad range of styles spanning hop-focused beers, lagers, stouts, and an extensive barrel-aging program.

Serving Suggestions:

Serve at 10 to 12 degrees Celsius in a stout glass, tulip, or small nonic pint to allow the toasted coconut, almond, and dark malt aromatics to develop. Pair with chocolate cake, almond pastries, coconut desserts, vanilla ice cream, roasted nuts, or a sharp aged cheese, where the beer’s roasted and nut-driven character can complement both sweetness and savory richness.

Cerebral Brewing

But Cerebral Brewing is more than its beer. Deeply rooted in the community, the brewery has always seen craft beer as a platform for positive change. Each year, they dedicate a portion of profits to local nonprofits, focusing on causes like women’s rights, LGBTQ+ equality, anti-gun violence, and healthcare access. Their monthly Queer Beers events, created by queer staff for the queer community, donate proceeds from every pint to rotating nonprofit partners.
