Bright, saline, and distinctly coastal, 2025 Domitia Picpoul de Pinet brings together spring flowers, ripe melon, stone fruit, and a clean mineral edge, all carried by the variety’s naturally bracing acidity. Made entirely from Piquepoul grown on organic limestone and chalk plots overlooking the Bassin de Thau, the wine is fermented and raised in stainless steel to preserve freshness and clarity. While much of Picpoul de Pinet is produced through cooperatives, the Allies family reserves these plots for its own production, giving Domitia an unusually direct estate expression of this Mediterranean white.

Sensory Description:

Fresh spring flowers and a mineral streak lead into a generous core of melon and stone fruit. The palate has more mid-palate richness than its brisk profile initially suggests, balanced by clean, mouthwatering acidity that keeps the wine taut and refreshing. A saline, stony character runs through the fruit, bringing definition to a crisp, persistent finish.

Winemaker's Background:

Domitia is produced from selected vineyards of Domaine Guillamarine, the Pomerols estate of sixth-generation grower Guillaume Allies and his wife Marion. The family’s vineyards look toward the Bassin de Thau, the Mediterranean saltwater lagoon known for its oyster and mussel beds. Although the family sells most of its grapes to local cooperatives, selected organically farmed plots are retained for Domitia. These vines grow on gentle limestone and chalk slopes influenced by the lagoon’s maritime environment. The cuvée takes its name from the Via Domitia, the ancient Roman road built through the Languedoc on its route between Italy and Spain.

Serving Suggestions:

Serve well chilled, around 8 to 10 degrees Celsius. Its bright acidity and saline character make it particularly well suited to oysters, mussels, clams, grilled fish, shrimp, ceviche, and other simply prepared seafood. It also pairs naturally with fresh goat cheese, light vegetable dishes, and Mediterranean appetizers. Best enjoyed young while its fruit, floral notes, and coastal freshness are at their most vivid.
