Sensory Description:

This wine brims with the vibrancy of Tenerife’s volcanic soil. Aromas of crushed blackberries, wild herbs, and red florals float above a mineral-rich core of lava rock and graphite. The palate is supple and savory, with lifted acidity and earthy tannins supporting notes of spiced cherries, dried rose petals, and an undercurrent of smoky salinity. It finishes long and fresh, with the brightness and precision of a wine grown under Atlantic breezes and aged with restraint.

Winemaker's Background:

Envínate is the collaborative project of four enology school friends, Roberto Santana, Alfonso Torrente, Laura Ramos, and José Martínez, who reunited to create terroir-driven wines in underappreciated Spanish regions. From the slopes of Ribeira Sacra to the volcanic vineyards of the Canary Islands, their work champions low-intervention, hand-harvested, organically farmed wines fermented with wild yeasts and raised in neutral oak or concrete. Envínate’s philosophy is simple: minimal interference, maximum expression.

Serving Suggestions:

Serve slightly chilled, around 55–58°F. Ideal with grilled octopus, jamón Ibérico, or dishes featuring smoked paprika, wild mushrooms, or charred eggplant. Its mineral backbone and subtle tannins make it versatile for Mediterranean or coastal cuisine.

The 2020 Envínate La Santa de Úrsula, Ycoden-Daute-Isora, Spain is a standout expression of Tenerife’s high-altitude, Atlantic-influenced terroir, a wine that speaks quietly but profoundly of place, tradition, and the integrity of its makers.
