Winemaker’s Background:

Since taking over his family's estate in 2006, Fabien Jouves has become one of the leading figures in the new generation of Cahors winemakers. Farming certified organic and biodynamic vineyards on the limestone plateaus above the Lot Valley, he produces wines with minimal intervention, relying on manual harvesting, spontaneous fermentations, and restrained use of sulfur to express the purity of site and grape. His wines have helped redefine Cahors with a fresher, more elegant interpretation that remains deeply rooted in tradition while embracing innovation.

Serving Suggestions:

Serve lightly chilled at 14 to 15 degrees Celsius in a Burgundy-style glass to emphasize the wine's vibrant fruit and freshness. Pair with tapas, grilled meats, charcuterie, roast chicken, wood-fired vegetables, or enjoy on its own with friends on a warm afternoon.
