Sensory Description:

Dark cherry leads the aromatic profile, opening into a fruit-forward palate where ripe cherry flavor is sharpened by brighter red-cherry acidity. The contrast gives the wine energy and definition without sacrificing its approachable character. Fresh acidity keeps the fruit lifted through the finish, making this an easygoing but well-defined expression of Pinot Noir.

Winemaker's Background:

Pearce Predhomme is a collaborative wine project founded by Ontario wine importer Nicholas Pearce and sommelier and entrepreneur Will Predhomme, built around producing terroir-driven wines from favored appellations while maintaining an emphasis on value and accessibility. The partners work internationally, collaborating with established production teams in Oregon for their Willamette Valley wines and with Radford Dale in South Africa for their Stellenbosch bottlings. In Oregon, the project works with NorthWest Wine Co., giving Pearce and Predhomme access to established regional winemaking resources while they shape wines around their shared vision of expressive, place-conscious bottlings designed for sommeliers, wine buyers and everyday drinking.

Serving Suggestions:

Serve slightly cool at approximately 14-16°C in a Burgundy or similarly generous Pinot Noir glass. Its combination of cherry fruit, lively acidity and approachable weight makes it versatile at the table, particularly with roasted chicken, grilled salmon, pork tenderloin, duck, mushroom dishes or simply prepared vegetables. A slight chill will emphasize the wine's brighter red-fruit character and refreshing acidity.
