Royal Vallet 'Fernet-Vallet', Mexico brings French bitter-making tradition into a distinctly Mexican frame: a sugarcane spirit from Veracruz, blended with domestically sourced botanicals and sweetened with cane sugar. Cardamom, clove, and mint give this fernet its assertive aromatic signature, while gentian and quassia build a deep, lasting bitterness suited to sipping and cocktails.

Product Details:

  • Spirit Type: Fernet-style bitter liqueur
  • Base Spirit: Neutral sugarcane spirit distilled in Veracruz
  • Botanicals: Cinnamon, clove, cardamom, mint, quassia, and gentian root; all botanicals are sourced domestically
  • Maceration: Botanicals are macerated individually in sugarcane spirit, then blended and co-macerated in stainless steel tanks
  • Sweetening: Cane sugar
  • Resting: 10 days in stainless steel before bottling
  • Coloring: Caramel color
  • ABV: 35%
  • Producer: Royal Vallet, distributed under license by Las Joyas del Agave, S.A. de C.V.
  • Distiller: Jorge “Chicho” Rodríguez

Sensory Description:

Cardamom and clove lead the nose, with a cool menthol lift. The palate is intensely herbal and woody, layering cinnamon, allspice, cedar, and cardamom over gentian-root bitterness. A long, smooth finish lets the spice and bitter botanicals linger without losing their definition.

Awards & Accolades:

  • Silver Medal: London Spirits Competition, 2023, 83 points

Producer’s Background:

Royal Vallet traces its roots to Henri Vallet, a French émigré who established himself as a distiller of liqueurs and bitters in Mexico in the 19th century. The house’s fernet has since become part of Mexican drinking culture, including cantina cocktails such as La Piedra, where fernet meets tequila and anise liqueur. Today, distiller Jorge “Chicho” Rodríguez carries the Vallet formulas forward with Mexican sugarcane spirit and locally sourced botanicals.

Serving Suggestions:

Sip it neat as a digestif or over a large ice cube. For a Mexican cantina classic, use it in a La Piedra with tequila and anise liqueur. Its firm bitterness also works well in stirred cocktails, where it can add cardamom, mint, and woody spice. Pair with dark chocolate, coffee desserts, or rich mole dishes.
