Sensory Description:

The 2023 Rabbit Mencía opens with lively aromas of red cherry, wild strawberry, and bramble, lifted by subtle violet and mineral undertones. On the palate, it is bright and fresh, offering crunchy red fruit, fine-grained tannins, and a whisper of salinity that speaks of Bierzo’s mountain terroir. With its medium body and clean acidity, the wine finishes long and pure, leaving a lingering impression of red fruit and crushed stone.

Winemaker's Background:

The Pérez family has farmed in Bierzo since 1752, and their stewardship of Castro Ventosa is deeply rooted in the land. Under the direction of Raúl Pérez, one of Spain’s most celebrated winemakers, the estate focuses on expressing the authentic character of Mencía through minimal intervention and sustainable farming. The “Rabbit Label” represents the youthful, fruit-driven side of the winery, an approachable, terroir-focused red that captures the freshness and vitality of Bierzo’s hillsides.

Serving Suggestions:

Serve slightly cool (55–60 °F) in a medium Bordeaux or tulip glass to enhance aromatics. Excellent with grilled poultry, seared tuna, charcuterie, or pork chops. Its bright acidity and soft tannins also make it a versatile partner for mushroom risotto, roasted vegetables, or aged Manchego. Enjoy now for its lively fruit or cellar for up to 5 years to appreciate its subtle evolution.
