  • Fermentation: Separate vinification in concrete vats and stainless-steel tanks; 25–28 days skin contact
  • Aging: ~12 months total; 40% in barrels and oak containers, remainder in cement tanks; blended and bottled after a few months

Sensory Description:

Bright and expressive, the wine offers aromas of cherry, redcurrant, and wild berries layered with violets and a gentle savory edge. The palate is medium-bodied and supple, delivering juicy red fruit framed by fine, puckering tannins and refreshing acidity. Subtle earthy and sanguine notes add depth, while balanced oak contributes texture without overshadowing purity. The finish is clean, lively, and elegantly persistent.

Winemaker's Background:

Since 1992, the Lippi and Santoni families have stewarded Frascole with a deep respect for nature and place, producing wines and olive oil that have been certified organic since 1999. Their vineyards in Chianti Rùfina, among Tuscany’s coolest Chianti subregions, benefit from altitude and clay-marl soils, yielding wines of perfume, structure, and natural freshness. Traditional practices, patient élevage split between cement and wood, and careful blending underscore a philosophy centered on authenticity and longevity.

Serving Suggestions:

Serve at cool cellar temperature in a large Chianti glass to highlight aromatics. A natural partner for pizza and classic Italian fare, it also shines with grilled meats, tomato-based pastas, roasted vegetables, and simple trattoria dishes.
