Cranberry, rosewater, white pepper, and rhubarb open with lifted aromatics and vibrant freshness. 2023 Sans Liege 'Groundwork' Counoise showcases the Central Coast through a minimalist approach that begins in the vineyard and continues with native fermentation, whole-cluster winemaking, and an unfined, unfiltered finish. It reflects Curt Schalchlin's belief that thoughtful restraint allows both site and variety to express themselves with clarity.

Sensory Description:

Bright cranberry and rhubarb lead the nose, followed by delicate rosewater, white pepper, and floral notes reminiscent of agua de jamaica. The palate is light on its feet yet expressive, with lively acidity carrying red berry fruit, subtle spice, and savory herbal nuances. Whole-cluster fermentation contributes aromatic lift and gentle structure, while the unfined and unfiltered approach preserves texture, energy, and a pure, refreshing finish.

Winemaker’s Background:

Founded by Curt Schalchlin, Sans Liege draws inspiration from the creative freedom available to California winemakers. After extensive experience producing hundreds of wines across diverse styles, Schalchlin established the winery to focus on Rhône varieties and minimal-intervention winemaking. The Groundwork series emphasizes vineyard character above cellar manipulation, relying on careful site selection, native fermentation, restrained sulfur use, and thoughtful decision-making to allow each wine to tell the story of its origin.

Serving Suggestions:

Serve lightly chilled at 12 to 14 degrees Celsius in a Burgundy-style glass to highlight the wine's lifted aromatics and vibrant acidity. Pair with roast chicken, grilled salmon, charcuterie, mushroom dishes, Mediterranean cuisine, or herb-roasted vegetables.
