Sensory Description:

In the glass, this Nebbiolo displays an intense deep violet color with bluish highlights. The nose is explosive and layered, revealing aromas of ripe blueberry, blackberry, tangy yogurt, and subtle savory undertones. On the palate, it opens with a velvety, creamy attack before evolving into juicy, lively tannins accented by fresh ink-like nuances. The combination of vibrant fruit, freshness, and structure creates a wine that feels both approachable and complex, finishing with elegance, persistence, and Nebbiolo’s hallmark depth. Its energetic profile makes it particularly well-suited to pizza, pasta, carnitas, Mexican street food, and globally inspired dishes such as Korean tacos.

Producer’s Background:

Casa Jipi represents a new generation of Baja California producers dedicated to expressing Mexican terroir through thoughtful, small-production winemaking. Working with classic European grape varieties while embracing the unique conditions of Valle de San Vicente, the winery focuses on varietal purity, balance, and freshness. Stainless steel vinification allows the fruit and site character to remain at the forefront, resulting in wines that are vibrant, authentic, and distinctly reflective of modern Mexican wine culture.

Serving Suggestions:

Serve slightly cool at 15 to 17 degrees Celsius to highlight the wine’s freshness, aromatic intensity, and lively structure. Pair with pizza, pasta, carnitas, grilled meats, street tacos, mushroom dishes, or fusion cuisine where the wine’s fruit, acidity, and tannin can complement bold flavors without overwhelming them.
