Floral, citrus, and fresh herb aromas meet almond, yeast, and a subtle mineral edge in Lustau Vermut Blanco. Built from a precise combination of dry, crisp Fino and sweet, floral Moscatel, this white vermouth places the character of its Jerez wines at the center while nine separately macerated botanicals provide bitterness, fragrance, and complexity. Created as the first white vermouth produced in the Jerez region, it reflects Lustau’s approach of extending the traditions of Sherry into a distinctive aperitif style.

Sensory Description:

Intense bright yellow with golden reflections, the vermouth opens with floral, citrus, and herbaceous aromas layered over the yeasty, mineral character of Fino. Almond and fresh herbs add complexity, while Moscatel contributes a softer floral sweetness that rounds the palate without obscuring its refreshing structure. Wormwood and gentian reinforce the bitter dimension, with rosemary, chamomile, citrus peel, and other herbs providing aromatic lift. The finish turns distinctly bitter and dry, leaving a long impression of nuts, herbs, citrus, and mineral freshness.

Producer’s Background:

Lustau traces its history to 1896, when José Ruiz-Berdejo began cultivating his family vineyard and producing wines as an almacenista for larger Sherry houses. The business evolved through successive generations before joining the Spanish family-owned Luis Caballero Group in 1990. Today Lustau maintains its principal aging cellars in restored nineteenth-century bodega buildings and remains closely identified with traditional Sherry maturation. Its modern vermouth collection began with Vermut Rojo in 2015, followed by Vermut Blanco in 2017. Master Blender Fernando Pérez and Cellar Master Sergio Martínez worked together on the Blanco recipe, carefully selecting both its Fino and Moscatel base wines and the botanicals used to complement them.

Serving Suggestions:

  • Serve: Between 7 and 9 degrees Celsius over ice in a wide glass with a green olive
  • Aperitif: Enjoy before a meal with olives, roasted nuts, salted almonds, or other savory snacks
  • Pairings: Match with tapas, shellfish, tinned seafood, fried fish, mild cheeses, or other dishes that complement its bitter, herbal, and lightly nutty profile
  • Cocktails: Use in vermouth-led cocktails where its Fino-derived dryness, Moscatel sweetness, and botanical bitterness can contribute greater wine character and aromatic complexity

Why Lustau Vermut Blanco:

Lustau Vermut Blanco distinguishes itself through a base of expressive Sherry wines rather than a neutral white wine foundation. Fino contributes dryness, almond, yeast, and mineral character, while Moscatel brings floral fragrance and measured sweetness. Nine individually macerated botanicals build on those wine-derived flavors with citrus, herbs, and bitterness, resulting in a white vermouth that remains refreshing while offering the depth and savory complexity associated with Jerez.
