Fresh lemon peel and bright citrus rise first, followed by a soft note of honey. The palate is lively and lemon-forward, balancing zesty peel character with gentle sweetness. Its clean, refreshing finish evokes limoncello while staying light enough to enjoy over ice or mix into a cocktail.

Producer’s Background:

Pure Distilling is a Colorado Springs distillery co-founded by Drew Leyes and Taylor Stuart. The company’s approach centers on flavor-led spirits, locally sourced ingredients, and an all-glass distilling process. Head Distiller Cole Chapman leads the production team, which makes Rocky Mountain Sunshine as part of Pure Distilling’s own Colorado spirits line.

Serving Suggestions:

Serve chilled or over ice in a rocks glass. For a refreshing highball, add soda water and a lemon wheel; for a more cocktail-forward pour, use it in a Lemon Drop-style drink. It also works in a simple lager shandy. Pair with grilled chicken, seafood, fresh salads, or soft cheeses to complement its citrus and honey notes.
