Crafted from Yamadanishiki rice and named in tribute to the legendary poet Li Bai, this sake bridges elegance and approachability with ease. It reflects a brewing philosophy rooted in history, culture, and a deep respect for the role sake plays at the table, even alongside challenging, vegetable-driven dishes.

Sensory Description:

The aroma is softly expressive, with notes of ripe banana, lemon zest, and aloe vera unfolding gently from the glass. On the palate, the sake is rich yet controlled, offering a sturdy structure balanced by clean acidity and a dry finish. Subtle fruit sweetness is framed by savory depth, allowing the flavors to remain focused and versatile rather than overtly aromatic. This Junmai Ginjo style leans toward texture and balance rather than excess perfume, making it especially well-suited to foods that often overpower wine.

Producer’s Background:

Founded in 1882 in the castle town of Matsue, Rihaku Brewing Company has long drawn inspiration from the abundant water, greenery, and cultural heritage of Shimane Prefecture. The brewery’s name and identity are deeply tied to Li Bai, the famed Tang Dynasty poet celebrated for his love of sake and verse. Over generations, Rihaku has preserved traditional brewing methods while refining a style known for mellowness, balance, and global appeal. Today, under the leadership of Yuichiro Tanaka, the brewery continues to honor both myth and history through sake that resonates far beyond its place of origin.

Serving Suggestions:

Best enjoyed chilled, between 40–60°F, to highlight its balance of richness and dryness. This sake works beautifully as an aperitif and pairs especially well with seafood, vegetable-forward dishes, and subtly spiced cuisines where its structure and acidity can shine without competing.
