Sensory Description

Deeply aromatic and captivating, the bouquet opens with layers of dark cherry, ripe plum, sage, leather, underbrush, and exotic spice. The palate is full-bodied yet remarkably polished, revealing concentrated dark red fruit, sweet herbal nuances, black pepper, and subtle earthy complexity. Silky tannins and vibrant acidity create balance and freshness, while lingering notes of crushed minerals, violet florals, and savory herbs carry through an exceptionally long and refined finish.

Winemaker’s Background

The Ciavolich family’s roots in Abruzzo date back to 1560, with winemaking becoming a central part of the family legacy during the nineteenth century. Today, the estate is managed by Chiara and Gianluca Ciavolich, who oversee approximately 50 hectares of sustainably farmed vineyards across the Pescara province. Their focus on native varieties and thoughtful, low-intervention winemaking has established Ciavolich as one of Abruzzo’s most respected producers, crafting wines that emphasize balance, authenticity, and regional identity.

Serving Suggestions

Serve at 16–18°C after decanting for at least one hour. This wine pairs beautifully with grilled ribeye, braised short ribs, roasted pork shoulder, wild game, mushroom ragù, hearty pasta dishes, and aged Pecorino cheeses. Its structure and freshness also allow it to develop gracefully through 2030.
