Delicate yellow flowers, white-fleshed fruit, and fresh citrus unfold alongside fine, persistent bubbles and a mineral finish. The 2020 Enrico Serafino 'Oudeis' Millesimato Brut is a traditional-method sparkling wine from Piemonte's Alta Langa DOCG, combining 85% Pinot Noir with 15% Chardonnay. Aged for at least 36 months on its lees, it balances freshness and textural depth with the complexity of extended bottle maturation. Its name, Oudeis, meaning "no one" in Greek, reflects the winery's belief that the distinctive character of a wine originates in its terroir rather than any single individual, a philosophy rooted in Enrico Serafino's winemaking heritage dating to 1878.

Sensory Description:

Straw yellow with golden reflections, the wine displays a fine, persistent stream of bubbles. The nose is delicate yet complex, revealing yellow blossoms, white orchard fruit, and subtle bread-crust aromas, with an underlying mineral character. The palate is dry, focused, and lively, with citrus freshness defining its rich, layered texture. Extended lees maturation contributes depth and a refined mouthfeel without diminishing the wine's precision. Elegant acidity carries the fruit through a long, distinctly mineral finish, with a close harmony between aroma and flavour.

Producer’s Background:

Founded in 1878 by Enrico Serafino in Canale, Piemonte, the winery has a long history of producing wines from the Langhe, Roero, Barolo, and Monferrato. Its early commitment to traditional-method sparkling wine helped establish a distinctive identity at a time when this style was still uncommon in the region. Enrico Serafino subsequently became one of the pioneering producers associated with the development of the Alta Langa denomination, which achieved DOCG recognition in 2011. Acquired by the Krause family in 2015, the winery continues to combine its historic approach with modern precision under winemaker Paolo Giacosa. Sustainable vineyard management, careful fruit selection, and extended lees maturation remain central to its sparkling wine production. The Oudeis cuvée expresses this philosophy through its emphasis on vineyard character and meticulous cellar work, allowing the complexity of Alta Langa's hillside vineyards to emerge through a refined, approachable style.

Serving Suggestions:

Serve well chilled at 4 to 6 degrees Celsius in a tulip-shaped sparkling wine glass to preserve the fine mousse while allowing the delicate floral, citrus, and lees-derived aromas to develop. An excellent aperitif, it pairs naturally with oysters, shellfish, grilled prawns, and delicately prepared fish. Its bright acidity and layered texture also complement seafood risotto, lightly dressed pasta, and refined vegetable dishes, making it equally suitable for enjoyment throughout a meal.
