Vinos de Terrunos German Gilabert Brut Nature Reserva Cava, Penedes, Spain, captures the crisp, mineral-driven character of traditional Catalan sparkling wine. Crafted from the classic Cava varieties Macabeo, Xarel·lo, and Parellada, this non-vintage cuvée originates in the elevated vineyards of Alt Penedès, where limestone-rich soils contribute freshness and precision. Aged 18 to 20 months on its lees and bottled without added dosage, it delivers fine bubbles, elegant texture, and a distinctly dry finish, offering an expressive alternative to more expensive traditional-method sparkling wines.

Sensory Description:

Fine, persistent bubbles introduce delicate aromas of lemon zest, fresh citrus, and subtle mineral notes. The palate is crisp and elegant, balancing bright acidity with a medium-bodied texture developed through extended lees contact. Citrus flavors are complemented by a restrained savory character and a stony mineral edge. With no added dosage, the wine maintains exceptional dryness and precision, finishing clean, concentrated, and refreshingly persistent.

Producer’s Background:

Founded in 2003 by José G. Pastor, Vinos de Terruños builds on the Pastor Gilabert family's involvement in Spanish wine and hospitality dating to the 1980s. Today, Teresa Pastor leads the family project, working with experienced regional growers and winemakers to create small-production wines that highlight Spain's indigenous grape varieties. German Gilabert is a specially developed Cava cuvée produced in collaboration with a local sparkling wine specialist. The family's approach emphasizes thoughtful vineyard selection, sustainable farming, traditional production methods, and wines that express their regional identity without unnecessary intervention.

Serving Suggestions:

Serve well chilled at 43–48°F (6–9°C) in a tulip-shaped sparkling wine glass to highlight its fine mousse and mineral freshness. Its bone-dry character makes it an excellent aperitif and a versatile pairing for Spanish tapas, particularly jamón Ibérico, salt cod, anchovies, croquettes, and grilled seafood. Equally suited to oysters, fried calamari, and lightly seasoned fish dishes. Best enjoyed young to appreciate its lively bubbles and refreshing acidity.
