In the Grand Cru village of Ambonnay, Laetitia Billiot continues four generations of Champagne heritage at H. Billiot Fils. Working 18 mid-slope parcels across just 5 hectares, she farms organically and vinifies with precision, relying on stainless steel, traditional basket pressing, and no malolactic fermentation. The resulting wines are powerful yet finessed, dense, structured, and defined by the strength and longevity of Ambonnay terroir. With bottlings never stabilized or filtered, and disgorgement done to order, every cuvée reflects an uncompromising commitment to purity and expression.
