Sensory Description:

A rush of citrus zest and crushed orchard fruit introduces the wine, followed by threads of hazelnut, white peach, and sea salt. With no dosage and no added sulfur, it speaks in a clear, unmasked voice, crisp, precise, and layered with subtle oxidative depth from its long aging on lees. Winemaker's Background:

Vincent Couche took over his family estate in 1999 and transformed it into one of Champagne’s earliest fully biodynamic domaines. Guided by soil expert Claude Bourguignon, he replanted and restructured every parcel across Montgueux and Buxeuil, eventually earning the first combined Demeter certification for vineyards and cellar in the region. His approach is resolutely natural, no added yeast, sugar, or sulfur, allowing each cuvée to express the raw vitality of the fruit and the energy of the land.

Serving Suggestions:
