WeldWerks Brewing's 'Pumpkin Cheesecake' Sour Ale Beer turns a familiar autumn dessert into a tart, creamy expression built around pumpkin puree, cream cheese, vanilla, and milk sugar. At 4.7% ABV, it layers the earthy sweetness of pumpkin and soft vanilla over the tang of a sour ale, while cream cheese and milk sugar reinforce the richness suggested by its name. The result sits squarely in WeldWerks' culinary-minded approach to brewing, where recognizable flavors are reworked through an inventive craft beer lens.

Product Details:

  • Founders: Neil Fisher and Colin Jones
  • Head Brewer: Neil Fisher
  • Ingredients: Pumpkin puree, cream cheese, vanilla, and milk sugar
  • ABV: 4.7%

Sensory Description:

Pumpkin puree supplies an earthy, gently sweet foundation, complemented by the rounded aromatic character of vanilla. Cream cheese and milk sugar build a richer, dessert-inspired impression around the beer's tart sour-ale framework, bringing together tangy, creamy, and sweet elements. The moderate 4.7% ABV keeps the composition from relying on alcoholic weight, allowing its pumpkin-cheesecake concept to remain the focus.

Brewer's Background:

WeldWerks Brewing Co. was founded by Neil Fisher and Colin Jones and opened in Greeley in 2015. The brewery grew from Fisher's years of homebrewing, with competition success helping turn an informal plan between the future founders into a commercial brewery. Fisher serves as co-founder, co-owner, and head brewer, while Jones serves as co-founder and CEO. WeldWerks has developed a reputation for moving comfortably across a wide spectrum of beer styles, from its flagship Juicy Bits IPA to lagers, barrel-aged beers, sours, and culinary-inspired specialty releases. That experimental range provides a natural setting for beers such as Pumpkin Cheesecake, where familiar food flavors become the framework for a deliberately unconventional sour ale.

Serving Suggestions:

Serve chilled at 7 to 10 degrees Celsius in a tulip or stemmed beer glass to give its pumpkin, vanilla, and creamy aromatics room to develop. Pair with graham-cracker desserts, vanilla ice cream, spiced cakes, roasted nuts, or a traditional slice of pumpkin pie. It can also work as a dessert course on its own, particularly when a tart counterpoint to richer sweets is desired.
