Producer’s Background:

Ayunta is the brainchild of Filippo Mangione, a native of Agrigento who returned to his Sicilian roots after a career in wine service and journalism. In 2011, driven by a deep desire to revive his family’s legacy, Filippo purchased abandoned vines in the contrada of Calderara Sottana on Mount Etna. Today, his 2.8-hectare estate is home to ancient bush-trained vines, some over a century old, thriving in mineral-rich volcanic soils at altitudes above 600 meters. Farming naturally and working entirely by hand, Filippo produces soulful, honest wines that reflect both the resilience of Etna and the purity of its native grapes.

Serving Suggestions:

Serve chilled at 45–50°F and don’t be afraid of the light sediment, it adds texture and charm. This sparkling rosé is perfect with seafood crudo, Sicilian caponata, cured meats, or fresh goat cheese.
