Los Conejos Malditos Rosado 2025 is a vibrant, organically grown rosé that perfectly captures the freshness and character of Castilla. Produced by Bodegas Más Que Vinos, this expressive wine is crafted from carefully selected old-vine Tempranillo grown in vineyards that are as coveted by local rabbits as they are by the winemakers themselves. The naturally reduced yields concentrate flavour and freshness, while a delicate saignée vinification and extended lees ageing create a rosé that is beautifully textured, lively, and effortlessly drinkable.

Delicate pale salmon with subtle onion-skin hues. The nose is bright and aromatic, revealing wild strawberries, raspberries, white cassis, rhubarb, hibiscus, grapefruit, and delicate white flowers. The palate is fresh, crisp, and beautifully balanced, with vibrant flavours of strawberry, raspberry, red currant, citrus zest, and a subtle mineral lift. Bright acidity carries the wine through a long, refreshing finish with lingering notes of grapefruit and red berries.

Winemaker Background:

Founded in 1999 by Gonzalo Rodríguez, Alejandro Fernández, and Javier García, Bodegas Más Que Vinos was born from a shared vision of producing authentic wines that express the heritage of Castilla. After consulting for many of Spain's most respected wineries, the trio restored Gonzalo's family winery dating back to 1851 and revived traditional clay amphora winemaking alongside thoughtful modern techniques. Deeply committed to sustainability, the winery is recognised with the prestigious Wineries for Climate Protection certification and continues to champion low-intervention viticulture while preserving the region's rural landscape and historic vineyards.

Serving Suggestions:

Serve well chilled between 10-12°C in a medium-sized tulip-shaped rosé or universal white wine glass to highlight its delicate aromatics and vibrant acidity. No decanting is required. Ideal as an aperitif or for warm-weather entertaining, it pairs beautifully with antipasti, olives, Marcona almonds, hummus, grilled vegetables, fresh salads, and Mediterranean mezze. Its bright citrus profile complements oysters, prawns, grilled fish, sushi, ceviche, octopus, calamari, and seafood paella, while also matching grilled chicken, turkey, pork tenderloin, and light charcuterie. Vegetarian pairings include roasted peppers, tomato tart, grilled asparagus, courgette fritters, and herb-filled rice dishes. Soft goat's cheese, burrata, feta, and mild Manchego make excellent cheese companions, while potato chips, salted nuts, bruschetta, and tapas provide effortless casual pairings for picnics, barbecues, and alfresco dining.
