Sensory Description:

Volksbier pours a rich amber color and leads with toasted malt, crusty bread, roasted nuts, and warm caramel. Subtle noble-hop spice and measured bitterness keep the malt character from becoming sweet, giving the beer an unusually composed balance between richness and refreshment. The palate is smooth and rounded through the middle, then tightens into a crisp, dry finish with lingering toast, light brown sugar, and gentle herbal spice.

Producer’s Background:

Wibby Brewing was founded by Ryan Wibby and Ted Risk and opened in Longmont, Colorado in 2015 with an unusually focused mission: brew lagers exclusively. Ryan Wibby had already worked professionally at breweries including Iron Hill, Ithaca Beer Company, and Deschutes before completing the Certified Brewmaster program and an additional research internship at VLB Berlin. That German training helped shape Wibby’s house philosophy of applying traditional lager brewing principles to modern American craft beer. The brewery uses German malt, Pacific Northwest hops, Rocky Mountain water, cold fermentation, and extended conditioning to build beers around clarity, balance, and crisp finishes rather than intensity for its own sake.

Serving Suggestions:

Serve at approximately 42 to 46 degrees Fahrenheit in a lager glass, mug, or traditional half-liter stein. Its toasted malt, moderate bitterness, and dry finish make it especially versatile with bratwurst, schnitzel, roast pork, grilled sausages, burgers, pretzels with mustard, roasted vegetables, Alpine cheeses, or other hearty Central European fare.
