Brewer's Background:

Revolution Brewing grew from founder Josh Deth's experience in Chicago's brewing community, beginning with work at Golden Prairie Brewing and later at Goose Island before the Revolution brewpub opened in 2010. Its production brewery followed in 2012, establishing the foundation for an independently owned Chicago brewery producing a broad range of ales, lagers, and barrel-aged beers. Brewmaster Jim Cibak has played a central role in the brewery's production program. Introduced broadly in 2024, Cold Time brought that experience to the familiar American lager format, emphasizing all-malt ingredients, patient cold conditioning, and freshness rather than adjuncts or abbreviated production. Its success subsequently provided the foundation for Revolution's expanded Cold Time family of lagers.
