400 Conejos Espadin - Cuishe Mezcal Joven, Oaxaca, Mexico brings together Espadín from Tlacolula and Cuishe from Miahuatlán in a 100% agave mezcal. The two agaves offer complementary character: Espadín lends gentle cooked-agave sweetness, while Cuishe adds earthy and herbal depth. Floral aromas and a restrained thread of smoke give this joven a layered profile suited to sipping or cocktails.

Producer’s Background:

The name 400 Conejos refers to the Centzon Totochtin, the “400 rabbits” of Nahuatl tradition associated with agave beverages. The label explains that 400 represents the innumerable. Becle’s annual report places 400 Conejos production in Santiago Matatlán and describes wood-fired cooking, horse-pulled stone milling, double distillation and hand bottling as part of the brand’s production. Creyente is a notable related mezcal brand in the same portfolio; its Cuishe expression is also listed under NOM-O220X.

Serving Suggestions:

Serve at room temperature in a copita or small mezcal glass, neat or with orange and sal de gusano alongside. Its herbal and citrus notes also suit a restrained mezcal Margarita or a grapefruit highball. Pair with ceviche, aguachile, spiced grilled vegetables or tlayuda.
