Crafted from the estate’s oldest Trebbiano vineyards, this expressive white wine showcases the remarkable depth, texture, and mineral character that old vines can achieve. Fermented with indigenous yeasts and matured on its lees in terracotta amphorae and Slavonian oak, it is a soulful interpretation of one of Abruzzo’s most historic grape varieties.

Sensory Description

Bright straw in color with shimmering highlights, Fosso Cancelli opens with elegant aromas of pear, fresh apple, dried honey, lime zest, quince, and wet stone. The palate is energetic yet refined, layering flavors of ripe pear, dried orchard fruit, citrus, and quince over a distinctly mineral core. Crisp acidity provides focus and lift, while the extended lees aging contributes texture and depth. The finish is long, dry, and stony, leaving a lasting impression of river stone minerality and remarkable purity.

Winemaker’s Background

The Ciavolich family traces its roots in Abruzzo back to 1560 and has been producing wine since the mid-1800s. Today, the estate is led by Chiara and Gianluca Ciavolich, who oversee two sustainably farmed properties totaling approximately 50 hectares across the Pescara province. Focused on native Abruzzese varieties including Trebbiano, Montepulciano, and Cococciola, the family combines centuries of tradition with thoughtful, low-intervention winemaking practices that highlight the unique character of the region.

Serve chilled between 10–12°C. This wine pairs beautifully with grilled seafood, shellfish, fresh cheeses, lemon-herb roasted chicken, vegetable risotto, and Mediterranean-inspired dishes.
