Lemon zest, green apple, and white flowers open with crisp, aromatic energy. 2025 Domaine Ricard Touraine Le Bouc is a pure Sauvignon Blanc shaped by organic farming, clay-limestone soils, stainless-steel élevage, and brief contact with the fine lees. Its bright, direct character reflects Vincent Ricard’s commitment to expressive Touraine Sauvignon and the continued development of his family’s six-generation winegrowing estate.

Sensory Description:

The nose brings together lemon peel, grapefruit, green apple, and delicate white flowers, with a subtle grassy note adding varietal definition. The palate is dry and light-footed, carried by brisk acidity and a clean mineral line. Citrus and orchard-fruit flavours retain focus through the finish, where gentle lees-derived texture balances the wine’s fresh, precise structure.

Winemaker’s Background:

Domaine Vincent Ricard is a family wine estate with six generations of viticultural history. Vincent Ricard took over the property from his father in 1999, leaving the local cooperative model to vinify, bottle, and market the domaine’s wines independently. Today, the estate comprises 36 hectares, predominantly planted to Sauvignon Blanc, with a smaller area of Côt. Vincent began converting the vineyards to organic farming in 2013, combining mechanical soil cultivation with measured cellar work intended to preserve the character of each cuvée. Le Bouc appears to be a legacy or market-specific label within the domaine’s Sauvignon Blanc range.

Serving Suggestions:

Serve chilled at 8 to 10 degrees Celsius in a medium-sized white wine glass to emphasize its citrus aromatics, freshness, and mineral clarity. Pair with fresh goat cheese, oysters, shellfish, grilled white fish, asparagus, herb-led salads, sushi, or lightly dressed vegetable dishes.
