Sensory Description:

Expressive citrus and ripe tropical fruit lead the aroma, with orange, pineapple, and softer stone-fruit impressions layered over a lightly dank hop character. Citra provides vivid citrus lift, while Mosaic contributes tropical and resinous complexity and El Dorado reinforces the beer’s ripe fruit profile. The palate is soft and hazy in texture, carrying concentrated hop flavor without the weight of the stronger Giardiniera releases. A gentle grassy and resinous edge adds definition toward the finish, leaving citrus, tropical fruit, and subtle dankness lingering behind.

Brewer's Background:

Jeremiah Zimmer and Jude La Rose founded the brewery in Chicago in 2014 under the original South Loop Brewing Company name. In 2016, they adopted Hop Butcher For The World, a name inspired by Carl Sandburg’s famous description of Chicago as “Hog Butcher for the World.” The brewery developed its reputation through an ever-changing range of intensely fresh, hop-focused beers, with particular attention to hop selection, blending, and the individual aromatic character of different varieties. Today, Zimmer and La Rose remain co-owners, with Justin Miller serving as Head Brewer. Hop Butcher operates its North Center brewery and taproom in the former Half Acre facility on Lincoln Avenue as well as a larger production facility, giving the team room for both experimentation and wider distribution. Mild Giardiniera brings that hop-focused philosophy together with a particularly Chicago-specific name, offering the familiar Citra, El Dorado, and Mosaic combination in a more moderate format than its stronger Giardiniera counterparts.

Serving Suggestions:

Serve at 7 to 10°C in an IPA glass, tulip, or nonic pint to emphasize its citrus and tropical hop aromatics while retaining its soft texture. Pair with Italian beef, pizza, burgers, fried chicken, grilled sausages, tacos, sharp cheddar, or spicy sandwiches. Its juicy hop character and moderate bitterness also work particularly well with salty, rich, and mildly spicy foods.
