Just Enough Wines was founded in 2020 by Jessica Cox (Hershfield) and Kaitlyn Lo around the idea of creating a more conscious wine experience built on quality, portioning, and convenience. The founders saw traditional bottles as more wine than they wanted for many everyday occasions and developed a canned format intended to reduce excess without treating the wine itself as an afterthought. Working with Director of Winemaking Ross Bentley, the company focuses on vintage-specific California wines and sustainably grown fruit. Its “golden line” philosophy describes the balance between not enough and too much, combining thoughtful wine production with a format designed for relaxed, uncomplicated enjoyment.
