Production Process:

This mezcal is produced using traditional artisanal methods in a northern Mexican vinata, the regional term for a mezcal distillery. Mature cenizo agaves are roasted in underground earthen pits, crushed with a mechanical grinder, and fermented in ground-level wooden vats. Distillation takes place in a hybrid alembic still combining copper and wood, preserving both purity and rustic character.

Sensory Description:

The aroma reveals earthy layers of leather, wet clay, and sun-warmed grassy fields. On the palate, the mezcal opens with savory notes of buttered popcorn and coriander before evolving into subtle stone fruit and herbal tones. The texture is structured yet smooth, finishing long with mineral depth and a delicate balance of savory and fruit-driven elements.

Distiller’s Background:

Mezcal de Leyendas grew out of the founders’ early passion for the spirit, which began in the mid-2000s when mezcal was still relatively unknown outside regional communities. After opening one of Mexico City’s first dedicated mezcal bars, La Botica, the team began traveling across Mexico’s diverse agave regions to document and preserve traditional mezcal production. Their mission is to highlight the vast diversity of agave species and regional distillation traditions, working closely with independent maestros mezcaleros to bring authentic, terroir-driven expressions to the global stage.
