Sensory Description:

Capitulation opens with an expressive combination of flowers, citrus peel, and tropical fruit, carried by the added aromatic intensity of Citra and Hallertau Blanc. Beneath the hops, a soft malt character provides balance while Belgian yeast contributes fruity esters and peppery, clove-like phenols. The palate remains firmly rooted in Tripel, with moderate bitterness and a dry, spicy structure, but the dry hopping adds a more vivid citrus and floral edge. Pineapple-like fruit and subtle malt sweetness settle into a clean, persistent finish shaped by hops, peppery spice, and Belgian fermentation character.

Brewer's Background:

Monkless Belgian Ales was founded by Brewmaster Todd Clement after years of travel in Belgium and elsewhere in Europe developed his appreciation for Belgian brewing traditions. Clement brings a PhD in organic chemistry and a professional background in process chemistry to the brewhouse, applying technical precision to beers inspired by classic Belgian styles. He and Robin Clement own the brewery, while Head Brewer Hans Schopen works within the production program as Monkless continues to expand its brewing capacity. Rather than producing a broad range of conventional American IPA variations, Monkless built Capitulation by adapting its established Tripel, The Trinity, with carefully selected dry hops, an approach that reflects the brewery's balance of Belgian tradition and controlled experimentation.

Serving Suggestions:

Serve at approximately 45 to 50°F in a tulip or Belgian goblet to allow the floral hops, citrus, tropical fruit, and spicy yeast character to develop while retaining freshness. Pair with chèvre and arugula salads, grilled asparagus, peppered flank steak, roasted poultry, mussels, or moderately spicy dishes. Its combination of Tripel richness, dry finish, and aromatic hops also works well with washed-rind cheeses and herb-driven preparations.
