Sensory Description:

Supple and creamy in texture, this Gouda begins with buttery dairy richness before the peppers steadily build. Jalapeño contributes a fresh green-pepper character, chipotle adds a deeper smoky dimension, and habanero brings the most assertive heat. The richness of the cheese rounds the edges of the spice, creating a savory, creamy profile with persistent pepper warmth through the finish.

Producer’s Background:

Cheese Brothers was founded by Wisconsin natives Eric Ludy and Gene Graf, bringing together longstanding experience in the state's cheese industry with a direct-to-consumer approach. Ludy's family cheesemaking history reaches back to 1919, when his great-grandfather Fred “Fritz” Ludy, a Swiss cheesemaker, established the family's first Wisconsin cheese factory. Graf later learned the trade from Eric's father, Tom Ludy, and operated Barron County Cheese before co-founding Cheese Brothers. In 2021, Cheese Brothers joined Barron County Cheese and Red Apple Cheese in a specialty-cheese group acquired by Ronin Equity Partners, with the founders retaining a stake in the combined business. The brand continues to pair traditional Wisconsin cheesemaking with distinctive flavored cheeses such as 3 Amigos.

Serving Suggestions:

For the fullest texture and flavor, remove from refrigeration shortly before serving and allow the cheese to lose its refrigerator chill. Slice or cube it for a meat and cheese board, especially alongside cured meats, crackers, pickles, or fruit preserves that can contrast its pepper heat. Its creamy melting character also makes it particularly well suited to grilled cheese, burgers, nachos, quesadillas, and mac and cheese.
