Sensory Description:

Peach leads the aromatics, joined by pronounced smoky notes and an unusual savory suggestion of celery. The palate is very clean and barely medium-bodied, with a lively, almost crunchy mousse giving the wine precision and energy. Riesling acidity carries the fruit toward an intensely slate-driven, bone-dry finish of impressive length, emphasizing mineral tension over richness.

Producer’s Background:

Weingut Peter Lauer is a fifth-generation Riesling estate in Ayl, with Florian Lauer as owner and Peter and Florian Lauer sharing cellar responsibilities. The family focuses entirely on Riesling, working to preserve distinctions of site, vintage, and style rather than forcing the grape into a single expression. Since 1984, the estate has also produced Riesling Sekt in the cellar beneath the historic Joh. Förster winery in Trier-Süd. The extensive multi-story vaulted cellar provides the cool, dark environment required for slow sparkling-wine maturation, while bottle fermentation and hand riddling retain the traditional, labor-intensive character of the process.

Serving Suggestions:

Serve chilled at 8 to 10 degrees Celsius in a tulip-shaped sparkling wine glass or white wine glass to preserve the fine mousse while allowing the Riesling aromatics to open. An excellent aperitif, it also pairs well with oysters, smoked trout, shellfish, sushi, tempura, fresh goat cheese, or lightly seasoned vegetable dishes where its dry finish and slate-driven acidity can provide contrast and lift.
