Sensory Description:

Bright aromas of citrus peel, white flowers, and green apple rise over a saline edge. The palate delivers a layered combination of Meyer lemon, crushed stone, and tart orchard fruit, evolving into a long, mineral-driven finish. With excellent structure and clarity, this wine speaks fluently of its soil, direct, crystalline, and alive.

Winemaker's Background:

Château de Béru, a historic 15-hectare estate owned by the Béru family for over 400 years, is now helmed by seventh-generation vigneronne Athénaïs de Béru. Since returning to the estate in 2005, Athénaïs has led a full conversion to biodynamic viticulture and natural winemaking. Her artisan approach, harvesting by hand, fermenting with native yeasts, and aging without additives, has redefined Béru’s role in Chablis, bringing a new purity and precision to the wines that reflect the land’s unique energy.

Serving Suggestions:

Serve at 50–54°F. Ideal with raw shellfish, sea bream carpaccio, goat cheese, or vegetable terrines. The wine’s crisp tension and mineral focus also lend themselves beautifully to creamy lemon pasta or grilled white meats.
